Wine sits at the heart of Olive. We serve a carefully curated selection of hand‑picked wines, many of them Spanish, chosen specifically to complement the food. Every dish on the menu has been considered with wine pairing in mind. Our wine merchants, Cheers, are based in Mumbles, and we’ve proudly worked with them for over 15 years — a relationship built on trust, knowledge and a shared passion for exceptional wine. Alongside wine, our bar team of fully trained mixologists serves an array of classic and contemporary cocktails, crafted with the same attention to detail as the food.
